Homemade Goodness: The Best Blueberry Muffins

We are getting ready for our annual blueberry picking weekend! So of course I have been hard at work coming up with some great recipes to share with everyone. I have to be honest, while I have devoted a whole weekend around them, I have not been a huge fan of blueberries in the past. But after playing around in the kitchen I have truly learned to love them! This was one of the first recipes that made me a believer! I hope that you enjoy! The Best Blueberry Muffins

This makes 12 standard muffins
Ingredients:
2 eggs
1/2 cup white sugar
1/2 cup brown sugar
1/2 cup canola oil or vegetable oil
1 tsp vanilla
1/2 tsp salt
1/2 tsp baking soda
1 cup sour cream
1 cup small blueberries

Preheat oven to 400 degrees F.

In a large bowl beat eggs and gradually add sugar while beating. Continue beating while slowly pouring in oil. Stir in vanilia.

In a separate bowl stir together flour, salt, and baking soda.

Stir dry ingredients into egg mixture alternately with the sour cream.

Gradually fold in blueberries (use small berries for more even distribution)

Scoop batter into prepared muffin cups. (fill all of the way to the top to get the nice dome on top)

Bake in preheated oven for 20 mins. Muffins are ready when you can stick the center of the muffin with a toothpick and it comes out clean.
